Awesome Zucchini Brownies


It’s that time of the year.  Zucchinis growing in the garden galore.  I made this recipe the other day, and my son who does not do zucchini loved them!  Moist and flavourful!

Zucchini Brownies

  1. Preheat oven to 350 and grease a 9×13 inch pan.
  2. In a large bowl, mix together melted coconut oil, coconut sugar, and vanilla.  Combine flour, cocoa, baking soda and salt.  Stir into the sugar mixture.  (It will have a cookie dough consistency.) Fold in the zucchini and spread evenly into the pan.
  3. Bake for 25 to 30 minutes.
  4. Spread with your favourite frosting.Image

Bananas Foster


English: Bananas and ice cream.

 

This has got to be the best dessert ever!  My mouth is watering just thinking about it.  Make sure the bananas you are using are not over ripe.

Directions

  1. Cut bananas in half lengthwise; set aside.
  2. In skillet or chafing dish, melt butter over medium heat; stir in sugar until melted. Add bananas, cut side down; cook, turning once, for about 3 minutes or until just barely tender. Sprinkle with cinnamon and nutmeg.
  3. Pour rum, over bananas, shaking pan to distribute liquid. Averting face, ignite with long wooden match. Using a long handled spoon baste bananas with flaming sauce until the flames subside.
  4. Serve immediately with ice cream.

Important

If you are increasing the amounts in the recipe, do not increase the rum.

Kick Ass Brownies


My favourite coffee at the time being is from http://kickinghorsecoffee.com/ it’s called Kick Ass and packs a punch.  Starts my day off right.  Well these brownies pack a punch as well. Definitely meant for “grown up ” taste buds.  I’d post a picture, but they were so good they disappeared into thin air.

Kick Ass Brownies

  • 1/2 cup butter
  • 1 cup sugar
  • 2 large eggs
  • 3/4 cup cocoa
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 3/4 cup flour
  • 1 cup chocolate chips
  • 1 chili pepper, chopped very small
  1. Melt butter in a pot
  2. Add sugar and stir until the mixture just starts to bubble.  Remove from heat
  3. Add cocoa, vanilla and salt. Mix
  4. Add eggs one at a time and mix well
  5. Add flour and stir for 1 and 1/2 minutes.  ( This is a good workout for your arms )
  6. Stir in chocolate chips and chili pepper.
  7. Pour into an 8 x 8 greased pan and bake @ 350 F for  about 15 minutes.
  8. Edges will be firm , center should still be soft.  Do not over bake them.

Cinnamon Buns with an Orange Cream cheese Frosting


  • 3/4 cup warm milk
  • 1/2 cup buttermilk
  • 2 eggs
  • 2 tsp. yeast
  • 4 cups flour
  • 1/3 cup sugar
  • 1 tsp salt
  • 1/3 cup butter

Filling

  • 1 cup brown sugar
  • 4 tbsp. cinnamon
  • 1 tbsp. cornstarch
  • 1/2 cup softened butter

Glaze

  • 1/4 cup cream cheese
  • 1/4 cup butter
  • 1 1/2 cups icing sugar
  • 1 tsp vanilla
  • zest of 1 orange
  • 2 tbsp orange juice
  1. Put all the ingredients for the dough into bread machine on dough setting
  2. Mix the filling ingredients together and set aside
  3. Roll out dough into a large rectangle
  4. Sprinkle the filling on top and  spread to the edges
  5. Roll up the dough tightly
  6. Cut the buns into 2 inch pieces
  7. Place in a parchment lined 9 x 13 pan
  8. Cover and let rise in a warm spot until doubled
  9. Bake for 15 minutes @ 350 f.  DO NOT OVER BAKE  you want them a light brown on top.
  10. While cinnamon buns are baking make the glaze.
  11. As soon as cinnamon buns come out of the oven spread half the glaze over the buns.  Once they have cooled a little more, spread over the rest of the glaze.

Easy Apple Berry Crumble


Apple Berry Crumble has got to be my favourite dessert!  And it’s so quick to prepare.

My raspberry harvest was fantastic this summer so I’ve got a freezer full of them.  The wild blueberries were also abundant, so I’ve got lots of them as well.

Try this out, I’m sure you’ll like it.

Apple Berry Crumble

  • 2 apples cored, peeled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 2 tablespoons flour
  • 1/4 cup white sugar

Toss all these ingredients together and put in a pyrex dish.

Crumble Topping

  • 1 cup oats
  • 1/2 cup flour
  • 1/3 cup melted butter
  • 1/2 cup brown sugar

Mix all these ingredients together and sprinkle on top of the fruit.

Bake @ 350 F for about 35  – 45 minutes.  The filling should be bubbling.

Serve warm with ice cream or whipping cream.
