It’s that time of the year. Zucchinis growing in the garden galore. I made this recipe the other day, and my son who does not do zucchini loved them! Moist and flavourful!
Zucchini Brownies
- 3/4 cup melted coconut oil
- 1 1/2 cups coconut sugar ( sub 1 cup white sugar )
- 2 tsp. vanilla extract
- 2 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- 2 cups finely grated zucchini
- Preheat oven to 350 and grease a 9×13 inch pan.
- In a large bowl, mix together melted coconut oil, coconut sugar, and vanilla. Combine flour, cocoa, baking soda and salt. Stir into the sugar mixture. (It will have a cookie dough consistency.) Fold in the zucchini and spread evenly into the pan.
- Bake for 25 to 30 minutes.
- Spread with your favourite frosting.
