Lazy Day Cake


Quick to make and very good.  Serve with mixed berry sauce ( summer fresh ) and whipped cream.  For something different, top with sliced bananas, drizzle with chocolate sauce and garnish with whipped cream.

Lazy Day Cake

  • 2 eggs
  • 3/4 cup sugar
  • 1 cup flour
  • 1 tsp b. powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/2 cup milk scalded
  • 1 tablespoon butter
  1. Beat eggs with sugar until thick and creamy. Add vanilla
  2. Mix flour with b.powder and salt
  3. Add to egg mixture and stir in
  4. Add butter to hot milk and let melt
  5. Pour milk slowly into batter while stirring
  6. Pour into an 8 inch pan
  7. Bake @ 350 for 20 – 25 minutes

Mixed Berry Sauce ( summer fresh )


I’ve just come out of the garden with the last of my raspberries.  A sign that summer is just about over.  I’ve got a cake baking in the oven.  I will serve this berry sauce over it, with whipped cream.  Here’s the recipe, it’s also excellent over waffles, cheesecake, ice cream and more.

Mixed Berry Sauce

  • 4 cups assorted berries, fresh or frozen
  • 1/2 cup water
  • 1/3 cup sugar
  • 1 1/2 tablespoons quick tapioca
  1. Mix all ingredients together in a  saucepan and cook for about 10 minutes.  Let cool .  Leftovers can be refrigerated for up to 5  days.
