Hamburger/Hotdog Buns


These buns are yummy, and easy to make as well.  Try the sloppy joe recipe with them.

Hamburger Buns

Ingredients

( If using a bread maker, follow instructions,  add onions when the add-in button beeps.)

  • 1 cup milk
  • 1/2 cup water
  • 1/4 cup butter
  • 4 1/2 cups all-purpose flour
  • 1 (.25 ounce) package instant yeast
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons salt
  • 1 egg

( to make onion buns, dice one onion small, sautee in pan with 1 tablespoon butter on med-low heat. Cook until brown, add 1 tbsp. of water if onions get too dry.  Add to bread dough.)

Directions

  1. In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  2. In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
  3. Divide dough into 16 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  4. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  5. For Hot Dog Buns: Shape each piece into a 6×4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above.

Crepes


Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 tbsp. sugar
  • 1 tsp vanilla
  • 2 tablespoons butter, melted

Directions

  1. Blend all ingredients except butter in a blender.  Add butter at the end.
  2. Refrigerate for 1 – 2 hours.
  3. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  4. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Stephan’s Coconut Cake

Lazy Day Cake

  • 2 eggs
  • 3/4 cup sugar
  • 1 cup flour
  • 1 tsp b. powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/2 cup milk scalded
  • 1 tablespoon butter
  • FROSTING:
  • 3/4 cup packed brown sugar
  • 1/2 cup butter or margarine, melted
  • 2 tablespoons light cream
  • 1 cup shredded coconut
  1. Beat eggs with sugar until thick and creamy. Add vanilla
  2. Mix flour with b.powder and salt
  3. Add to egg mixture and stir in
  4. Add butter to hot milk and let melt
  5. Pour milk slowly into batter while stirring
  6. Pour into an 8 inch pan
  7. Bake @ 350 for 20 – 25 minutes
  8. For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.
