Stephan’s Coconut Cake
Lazy Day Cake
- 2 eggs
- 3/4 cup sugar
- 1 cup flour
- 1 tsp b. powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup milk scalded
- 1 tablespoon butter
- FROSTING:
- 3/4 cup packed brown sugar
- 1/2 cup butter or margarine, melted
- 2 tablespoons light cream
- 1 cup shredded coconut
- Beat eggs with sugar until thick and creamy. Add vanilla
- Mix flour with b.powder and salt
- Add to egg mixture and stir in
- Add butter to hot milk and let melt
- Pour milk slowly into batter while stirring
- Pour into an 8 inch pan
- Bake @ 350 for 20 – 25 minutes
- For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.
