Spicy Chicken Kebabs


I made these the other day when B had a day off and came home.  I suggested hamburgers, but he wanted something “healthier”

We ate them with pita bread, tzaziki and greek salad.  It was a yummy meal!

Spicy Chicken Kebabs

  • 1 to 3 tsps. hot chili flakes
  • 2 tsps. finely grated lemon zest
  • 2Tbsps. lemon juice
  • 3 large garlic cloves minced
  • 1/2 tsp dried oregano  ( I used fresh since I have an abundance  3x the amount)
  • 1/2 tsp. paprika
  • 2 Tbsps chopped fresh parsley
  • 1 1/4 lb boneless, skinless chicken breast or thigh, cubed
  • salt to taste
Place all ingredients, except chicken and salt, in medium bowl and mix to combine.
Add the chicken and toss to coat.  Cover, refrigerate and marinate the chicken for 4 hours.
Preheat your grill to medium-high.  Divived and thread the chicken on 4 metal skewers.  ( I turned mine into kebabs by alternating chunks of peppers and onions.  You can also do quartered mushrooms. You will then get 6-8 skewers )
If your hands are sensitive to hot chilies, wear rubber gloves when skewering the chicken.
Season the chicken with salt.
Lightly oil the grill ( I skipped this step )
Grill for 6 to 8 minutes, turning occasionally, or until cooked through.

Yay, I’ve got spinach.  I can see it growing.  The onions are also coming up nicely. Sunflowers have sprouted.  The transplanted oregano is thriving.  Sadly though the zucchini  plants are looking pretty pathetic, not coming along yet.  Maybe they need some more fertilizer?  I think I will throw the rest of the chicken manure around them, see how they like that.

I’ve got 2 small tomatoes on a plant in the greenhouse, that’s exciting.

I’m off to the nursery to buy some herbs for Jorn’s annual Father’s Day herb pot.

 

 

Lemon Cream


This is a favourite dessert that my mother would prepare for special occasions.  Never once did I see leftovers!

 Lemon Cream

  • juice of 2 lemons
  • finely grated zest of 1 lemon
  • 3 eggs
  • 1 cup whipping cream
  • 1 pkg unflavoured gelatine
  • 4 tablespoons warm water
  • 1/2 cup sugar
Dissolve gelatine in 4 tablespoons warm water.
 Set aside.
Seperate eggs.
Beat egg yolks with sugar until thick and creamy.
Add lemon juice and zest.
Beat egg whites until stiff.
Whip the cream
Heat gelatine on low heat, stirring until liquid. Do not boil
Pour 1/4 of the egg mixture into the gelatine, pour this mixture into the remaining lemon egg mixture stirring constantly.  Fold in the egg whites and the whipped cream.  Transfer into a serving dish and chill until set.
Makes 4 servings

Blueberry Buckle


Spring is around the corner and like every other spring,I look into the freezer and try to figure out what to do with all that fruit!

I found this great and easy recipe for Blueberry Buckle.  I use the berries right out of the freezer and bake for 10 minutes longer.  If using the berries fresh, bake for the time shown.

This cakelike pudding is delectable with cream, whipped cream or ice cream.

Blueberry Buckle

Ingredient

  • 1/2 cup sugar
  • 1/3 cup butter
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk
  • 3 cups blueberries

Topping

  • 1/3 cup brown sugar, packed
  • 1/4 cup flour
  • 1/2 tsp cinnamon
  • 2 tablespoons butter

Preparation

In bowl, cream together granulated sugar with butter; beat in egg and vanilla. Stir together flour, baking powder and salt. Stir half of the flour mixture into butter mixture; blend in milk and remaining flour mixture to make stiff batter.

Spread batter in greased 8-inch (2 L) square cake pan. Cover evenly with blueberries.

Topping: In small bowl, stir together brown sugar, flour and cinnamon. Cut in butter until mixture is crumbly. Sprinkle evenly over blueberries. Bake in 350°F (180°C) oven until crisp and browned on top and knife inserted in center comes out clean, about 40 minutes.

Kassler Swedish Style


This is another recipe passed down from my mother-in-law Helga.  It’s one of my husband’s favourite dishes and so easy  to prepare.  If I cannot get my hands on a Kassler Loin, I use canadian back bacon instead.  The results are similar.

Kassler Swedish Style

  • 1 lb Kassler or back bacon sliced
  • 1 green bell pepper, diced fine
  • 1 red bell pepper, diced fine
  • 1 cup chili sauce
  • 1 1/4 cups whipping cream

Place the meat in a casserole dish, fanning it out.  It should all be in one layer.

Blanche the diced peppers and spread out onto the meat layer.

Mix the whipping cream and chili sauce, pour over the meat and peppers.

Wrap in tin foil and bake for 40 minutes @ 350.  For the last 10 minutes of baking time, take the tin foil off.

Serve with rice and a tossed salad.  Yummy!
