Hawaiian Chicken


This is an old favourite with the family.  My sister Angie was the first to make this.  I enjoyed it so much I had to get the recipe.  I serve this dish with rice pilaf, which I put in the oven at the same time.  While it’s baking, I curl up with a good book and let dinner cook itself.

Hawaiian Chicken

  • 1 pkg chicken thighs, or drumsticks, or both  ( about 10 pieces )
  • salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup ketchup
  • 2 heaping tablespoons brown sugar
  • 4 tablespoons soya sauce
  • 2 tablespoons apple cider vinegar
  • 1 can pineapple tidbits
  • 2 tbsp cornstarch
  1. Season chicken with salt and pepper.  Heat oil in frying pan,  fry chicken until brown on all sides.  It does not have to be cooked through.
  2. Mix all ingredients together in bowl.
  3. Put chicken in a baking dish, cover with the sauce.
  4. Bake in oven @ 350 for 40 minutes.  After 20 minutes baste chicken with sauce and continue cooking

Mamacita’s Best Barbecue Sauce


Making this sauce may take a bit of effort, but boy is it worth it.  I use it on baby back ribs.  Finger lickin’ good.

Mamacita’s Best Barbecue Sauce

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ginger, minced
  • 2 cups ketchup
  • 1/2 cup chili sauce
  • 1 tsp hot mustard
  • 2 tbsp brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tbsp worcestershire
  • 1 tbsp ground pepper
  • 2 tsp. salt
  • 1 tsp savory
  • 2 chipotle peppers chopped
  • 2 tbsp chipotle pepper sauce  ( from the can of peppers )
  1. Sautee olive oil, onion, garlic and ginger on med- low heat for 10 minutes, do not  brown. 
  2.  Add remaining ingredients and let simmer for 1 hour, stirring often.  It sauce gets too thick, add a bit of  water.

Sloppy Joes Grad Class 2010


Well here’s the recipe ladies for the sloppy joes for after grad.  Cook it in the crock pot.

Sloppy Joes

  • 1 1/2 lb ground beef
  • 1 pepper chopped fine ( red, or green )
  • 1/2 onion chopped fine
  • 1 clove garlic
  • salt and pepper to taste
  • 2 tsp. mustard
  • 2 tbsp ketchup
  • 1 can cream of tomato soup
  • 1/3 cup water
  • chili pepper flakes or sambal oelek for those who like it spicy.

Brown ground beef together with onion, pepper and garlic.  Add salt and pepper to taste.  Add the rest of the ingredients and put into crock pot, cook on low for 2 –  3 hours if you like.  You don’t have to use the crock pot.  Once all ingredients are hot, you can serve it right away.  Serve over hamburger buns.   Serves 6 – 8
