This is an old favourite with the family. My sister Angie was the first to make this. I enjoyed it so much I had to get the recipe. I serve this dish with rice pilaf, which I put in the oven at the same time. While it’s baking, I curl up with a good book and let dinner cook itself.
Hawaiian Chicken
- 1 pkg chicken thighs, or drumsticks, or both ( about 10 pieces )
- salt and pepper
- 1 tablespoon olive oil
- 1/2 cup ketchup
- 2 heaping tablespoons brown sugar
- 4 tablespoons soya sauce
- 2 tablespoons apple cider vinegar
- 1 can pineapple tidbits
- 2 tbsp cornstarch
- Season chicken with salt and pepper. Heat oil in frying pan, fry chicken until brown on all sides. It does not have to be cooked through.
- Mix all ingredients together in bowl.
- Put chicken in a baking dish, cover with the sauce.
- Bake in oven @ 350 for 40 minutes. After 20 minutes baste chicken with sauce and continue cooking
